October 1st marks National Vegetarian Day and what better way to celebrate than by taking a trip around the globe? With a quarter of a million consumers opting for plant-based diets in January alone, it’s no secret that there’s a high demand for vegetarian and vegan-friendly dining options among travelers. Major cruise lines like Oceania, Regent and Royal Caribbean started catering to vegetarians, and, now, hotels and resorts are following suit. A chic boutique hotel nestled in the heart of San Miguel de Allende, Mexico, Casa Delphine is walking distance from the city’s bustling center, but it is charming and tranquil enough for an intimate escape. The property features five suites with in-room fireplaces, balconies overlooking a private courtyard and/or city and a daily complimentary vegan breakfast inspired by fresh, local ingredients. The property also hosts pop-up vegan dinners led by rotating local chefs for a unique, vegetarian-friendly taste of what the city has to offer.
